An Ayurvedic-flip of a yummy classic! After living in the middle east, I could not go back to the typical American falafel, they were just NOT cutting it in comparison. In effort to curb those cravings and also not completely go against Ayurvedic guidelines with the typical fava bean and chickpeas, I opted for the entirely Yogic Mung Bean- to say it was a success is an understatement, this is one of my most requested recipes to day.
